"Cai Geda" is a traditional dish in Guanzhong region of Shaanxi Province. After chopping up green vegetable leaves, they are mixed with flour, alkaline solution noodles, salt, and other seasonings, then steamed in a pot until soft and cake-like. Once cooled, they are cut into slices or kneaded into shape and ready to be served.
To make delicious "Cai Geda," garlic-infused water is crucial. Peel a few cloves of garlic, place them in a garlic press with a pinch of salt, and crush them with a small wooden hammer. Sprinkle with chili powder, salt, and other seasonings, then heat edible oil and pour it over the mixture. The aroma immediately fills the room.
