On October 18, the Second China Kaili Sour Soup Industry Development Conference opened in Kaili City, Qiandongnan Prefecture, Guizhou Province.

The event aims to further explore the profound cultural heritage and unique industrial value of “Kaili Sour Soup,” showcase the achievements in industrial development, promote exchanges and cooperation, and promote the regional specialty food brand “Kaili Sour Soup” to expand nationally and globally, injecting strong momentum into the region’s high-quality economic and social development.

Kaili’s unique topography, temperature, humidity, and soil, together with its locally specific ingredients such as chili peppers, tomatoes, and microbial communities, collectively create a unique and irreplaceable natural environment for sour soup fermentation, nurturing a sour soup-making craft that has been passed down for generations. Kaili City is currently home to 20 sour soup processing enterprises, operating 32 production lines with a designed capacity of 69,000 tons and an annual output of 22,000 tons. The product range covers 23 categories, including base sauces, mixing sauces, and instant foods. These specialty products are not only popular in the domestic market but are also exported to Southeast Asia.

In recent years, the “Kaili Sour Soup” industry has transitioned from traditional manual production to modern, standardized, and industrialized processes, forming strong momentum for clustered development in industrial parks. A complete industrial system covering cultivation–processing–catering–sales has now been established. “Kaili Sour Soup” has become a golden business card for Guizhou’s opening-up and cooperation.
